Curry Baked Egg Rolls
Egg rolls can be used so many different ways . Most people who are short on time can literally wrap a salad in a rice paper for a quick hand held lunch ,while they are running to their next meeting or just need a quick bite while your driving somewhere. They can be eaten raw, they can be baked , or even air fried.
Growing up I use to love fried egg rolls and pastrami , these are just an amazing substitute for them whenever I feel the temptation . Fill them any way you want here are some ideas you can try or even this yummy curry recipe below.
-bake flat and spice it up and crack like chips with dip
-eat It raw rolled up like sushi
-add fruits and chocolate

Curry Egg Rolls
Ingredients
½ Bag of coleslaw
1 onion sliced
½ tsp curry
1 tsp chili seasoning
⅛ tsp turmeric
Salt to taste
Rice paper wrappers to roll
Directions
Preheat oven to 400 f
In a saute pan saute onion in a tablespoon of avocado oil until translucent . Add coleslaw and spices. Cook for 5 minutes tossing in between.
Wet the rice paper under running water and lay flat on counter. Fill rice papers on the end in the center being careful not to over fill to prevent breaking.
Fold the side in and then roll up carefully. Repeat steps and spray with oil. Bake for 15 minutes rotating in between until crunchy.
