Mexican Chicken Zucchini Noodles

Ingredients:
3 zucchinis sliced thin with a mandolin
1 pound turkey
1 onion diced
2 cloves garlic minced
1 8oz can of low sodium tomatoe sauce
1/4 tsp chili powder
1/4 tsp cumin
1/4 tsp paprika
Salt
Pepper
Tbsp olive oil for cooking or pam
1/4 tsp ortega taco seasoning low sodium
In a 4 qt pot fill it with water 1/2 way and bring to a boil. Lower the flame and drop in the zoodles. After 30 seconds remove and place under cold water to stop the cooking process.
Meanwhile in a saute pan add tbsp of olive oil and saute onions and garlic. Cook until translucent. Place aside and add in the turkey. With a meat scorer chop the meat and add in all the spices cumin, chili, paprika, taco seasoning, salt, pepper add in the tomato sauce after meat starts to cook. Add in some water for a less thicker consistency until desired consistency. Let it simmer and keep mixing for about 40 minutes.
Enjoy the meat mixture with anything you like. Lettuce taco cups, chili with beans and corn, over rice etc.
