Creamy Oatmeal with Pomegranate and Raspberry Topping
There are 3 different ways to make oatmeal
1. Pilaf texture into separated pieces
2. Creamy and thick - risotto type
3. Overnight in a mason jar
This one here is a Risotto type of oatmeal preferably served off the stove when you have company or a brunch on a hot plate. Another option is to buy a healthy ready to eat serving from Trader Joe's in the freezer section called Oatmeal with Maple Syrup. Very low in sugar and all you have to do is microwave for 2 minutes. Its an awesome vacation to go item or a grab and go breakfast for your busy day.
Ingredients:
1/2 cup steel cut oats OR Quaker Oats (BIG tub version)
1 cup almond milk or any other milk
cinnamon
1 Tablespoon Maple Syrup
1 Teaspoon Vanilla Extract
Directions:
1, In a pot bring milk to a boil and lower flame .
2. Add in oatmeal, cinnamon, syrup and vanilla.
3. To create creaminess keep stirring throughout the cooking process until milk is reduced to the consistency and creaminess desired.
*I had topped it with winter fruits like pomegranates. Be free to try all types of berries and added toasted nuts and peanut butter.
