No Bake Chocolate Chip Cookie Dough Bars
Yields 16 Bars
INGREDIENTS
3/4 cup peanut butter
1/3 cup maple syrup
1/2 cup unsweetened almond milk
3 tablespoons açaí powder (I use Navitas Naturals)
3 tablespoons cocoa powder
1/3 cup vanilla or chocolate protein powder
1 1/2 cups oat flour
1/2 cup rolled oats
FOR THE TOPPING
1/3 cup dark chocolate chips
1 tablespoon coconut oil
INSTRUCTIONS
1.Line a 8 x 8 baking pan with parchment paper and set aside.
2.In a food processor add the peanut butter, honey, almond milk, açaí, cocoa and mix until combined. 3.Add the oat flour, oats and protein powder and mix using a rubber spatula. It should be like cookie consistency. If you noticed it is crumble like just add a bit more almond milk and combine ingredients until you obtain a dough consistency.
4.Transfer the mixture to the prepared baking pan and with a spatula flatten it out. Cover it with plastic wrap and refrigerate for at least 4-6 hours. Once chilled, lift the mixture out of the pan by the ends of the parchment paper and cut into squares.
5.To prepare the chocolate topping, bring about an inch of water to a simmer in your saucepan. Set the heatproof bowl in the mouth of the pot, making sure the water doesn’t touch the bottom of the bowl. Add chopped chocolate and coconut oil to the bowl stirring constantly until the chocolate begins to melt and combines with the oil. With a spoon, drizzle the melted chocolate over the bars.
*NOTES
Instead of rolled oats you may use rice puffs or nuts and seeds of your choice!
